Famed San Francisco chef-turned-restaurateur Michael Mina opened Stonehill Tavern (currently known as Michael Mina’s Bourbon Steak), his first Southern California restaurant, at the St. Regis Monarch Beach Resort in Dana Point. This Forbes Travel Guide four-star restaurant was designed by celebrated international designer Tony Chi. The project entailed the demolition and reconstruction of an existing restaurant with several unique design-build features, including:

  • Three 13-foot high polished, stainless steel wine racks that house the restaurant’s 400-500 bottle selection.
  • A contemporary, sophisticated dining room with Italian mosaic tile flooring, a honed marble fireplace, custom pre-cast concrete walls, and hand-blown glass light fixtures.
  • A warm and inviting bar, lounge and outdoor terrace.
  • A private, fireside dining room for larger groups.
